Fruit cake

Ingredients
100 g white self raising flour
100 g wholemeal flour
300 g dried mixed fruit (currants, raisins, sultanas)
200 ml cold tea
2 tsp nutmeg
1 beaten egg

Soak the mixed fruit overnight with the tea.

Next day, mix all ingredients together. Pour into a greased 2lb loaf tin. Bake in a preheated oven 175°C/gas mark 5 for one hour. Cool on a wire tray.

Since there is no added sugar this product will keep for a maximum of three weeks in an airtight container or in a refrigerator.
