Bacon and avacado sandwich
- Ingredients
- 1 long French stick
- 3 tbsp oil, olive
- 8 lean bacon rashers - grilled crisp
- 2 tomatoes, vine ripened, sliced
- 2 ripe avacados, peeled, stoned and sliced
- A few basil leaves
- Salt and black pepper to taste
Cut the bread in four and then each of these segments in half. Dip the cut sides into the olive oil. Place the bacon on the bread. Top with the sliced tomatoes and avacados. Season lightly, replace the top of the bread and enjoy.
