Vanilla ricotta cream

Ingredients
1.5 cup cheese, Ricotta, low fat
1 tsp vanilla essence
2 tbsp artificial sweetener (granular)

This cream is an ideal substitute for whipped cream on scones, desserts, as a fruit dip or just on its own. Place the ricotta, vanilla and artificial sweetener in a bowl and beat with an electric mixer until light and fluffy. Cover and refrigerate until ready to use. Try any fruit with this cream for a tasty change – strawberries, rehydrated dried apricots, banana or a dash of your favourite liqueur for special occasions.
