Apple cake

Ingredients
100 g butter or vegetable-based margarine
125 g sugar/artificial sweetener if you have diabetes
2 egg(s)
2 apple(s)
120 g flour, wheat
1 tsp baking powder
60 g oatmeal
1 tbsp yoghurt, low fat, natural

Mix the butter and sugar together so it becomes light and airy. Stir the eggs in one at a time, mixing well between each egg. Peel the apples and grate them coarsely. Stir the shredded apples into the batter. Mix the oatmeal with wheat flour and baking powder. Stir the flour mixture into the batter. Add the yoghurt, stirring. Pour the batter into a greased baking tin (c. 1½ litre) Place the tin in the oven at 175 degrees Celsius for c. 45 minutes, or until the cake is golden and thoroughly baked. Tips: Leave the baked cake in the tin for a few minutes before removing. This cake is not suitable for freezing.
