Bacon salad with cheese dressing
- Ingredients
- 8 lean bacon rashers - grilled crisp
- 100 g mixed leaves
- 8 tomatoes, cherry
- Dressing
- 3 tbsp oil, groundnut
- 1 tbsp vinegar, balsamic/red wine
- 1 tbsp mustard, wholegrain
- 50 g cheese, cottage
Start with the dressing. Whiz the oil, vinegar, mustard and cheese in a food procesor. Taste for seasoning. Cook the bacon in a pan until crisp. In a large bowl mix the leaves and tomatoes together. Add the warm bacon and any juices in the pan. Mix in the dressing and serve immediately.
