Baked sardines

Ingredients
500 g sardine(s), fresh
lemon
breadcrumbs
parsley
20 g oil, olive

Gut the sardines and open them like a book, removing the central spine. Sprinkle with salt and squeeze the lemon juice over them. Then soak in oil and roll in the chopped garlic, parsley and breadcrumb mixture. Space out the sardines in an oven dish, with its base greased with oil. Roast in the oven until the bread turns brown. For best results with the sardines avoid using too much bread and do not brown for too long or they will be very black when you remove them from the oven. Serve the meal with potatoes, bread and fruit.
